Building a strong and responsible team takes time, investment and flair. Being able to choose the good person who has the business’ values is a difficult task. Occasionally, I still make mistakes, but with time we are able to recognize the good candidate. I think the greatest challenge is to manage a team. I had to be mean in many circumstances in order to discipline or reorganize my troops. Human and interpersonal relationships need delicacy/tact.

With already five stores, the human capital is our major challenge, in other words, recruiting, personnel retention and training. Combining the franchisor’s support and the Emploi-Québec coaching, we overcame this test/challenge and we now have a better structure and are more stable in human resources.

Being a former cook, I worked in Yuzu sushi bar kitchens. I was approached at the beginning of the franchises and my product and franchisor knowledge was enough to convinced me to get into the adventure. At the opening of my store, I was mostly the operator and had two investor partners by my side. I work hard to build my team and my counter’s reputation. Now that my partners left the business, the dynamic is different. It is nice to touch every aspects of the restaurant.

My franchise opening was intense because it started strongly the first week when I didn’t have a good team by my side. During the first year, I worked hard because I didn’t have the chance to find a trusted employee to whom I could delegate some responsibilities. Thereafter, I finally found the good one and I was now able to delegate some tasks and then I was able to be a good manager.
